High-Protein “Alfredo” Pasta with Roasted Cabbage Noodles

This recipe ditches traditional pasta for roasted cabbage “noodles” and swaps heavy cream for a secret high-protein ingredient—cottage cheese!

Instructions

Prep the Cabbage “Noodles”

  1. Preheat your oven to 425°F.
  2. Take the whole head of cabbage and cut it longways (from top to bottom).
  3. Place the cabbage halves face down on a baking sheet.
  4. Drizzle with avocado oil and massage in salt and pepper.
  5. Bake for 20 minutes, or until tender and slightly caramelized.

Make the High-Protein Alfredo Sauce

  1. Combine the following ingredients in a blender or food processor:
    • 16 oz full-fat cottage cheese
    • Softened butter
    • Shredded Parmesan cheese
    • A dash of milk
    • Garlic powder, onion powder, salt & pepper
  2. Blend until the sauce is completely smooth and creamy. Add more milk if the sauce is too thick.

Sauté the Chicken & Assemble

  1. Sauté the chicken (cut into strips or cubes) until it is fully cooked through.
  2. Once the chicken is cooked, reduce the heat and stir in the entire batch of Alfredo sauce.
  3. Let the sauce warm through, tossing to coat the chicken.
  4. Take your roasted cabbage “noodles” and pour the chicken and Alfredo sauce mixture over them.
  5. Serve immediately with a generous sprinkle of chili flakes on top. ENJOY!
