This recipe ditches traditional pasta for roasted cabbage “noodles” and swaps heavy cream for a secret high-protein ingredient—cottage cheese!
Instructions
Prep the Cabbage “Noodles”
- Preheat your oven to 425°F.
- Take the whole head of cabbage and cut it longways (from top to bottom).
- Place the cabbage halves face down on a baking sheet.
- Drizzle with avocado oil and massage in salt and pepper.
- Bake for 20 minutes, or until tender and slightly caramelized.
Make the High-Protein Alfredo Sauce
- Combine the following ingredients in a blender or food processor:
- 16 oz full-fat cottage cheese
- Softened butter
- Shredded Parmesan cheese
- A dash of milk
- Garlic powder, onion powder, salt & pepper
- Blend until the sauce is completely smooth and creamy. Add more milk if the sauce is too thick.
Sauté the Chicken & Assemble
- Sauté the chicken (cut into strips or cubes) until it is fully cooked through.
- Once the chicken is cooked, reduce the heat and stir in the entire batch of Alfredo sauce.
- Let the sauce warm through, tossing to coat the chicken.
- Take your roasted cabbage “noodles” and pour the chicken and Alfredo sauce mixture over them.
- Serve immediately with a generous sprinkle of chili flakes on top. ENJOY!
