Rich Chocolate Mocha Granola

Ingredients:

  • 4 cups rolled oats

  • 1 cup finely chopped nuts (almonds or walnuts)

  • 1 cup chocolate chips (or 2 chopped chocolate bars)

  • 1/2 cup coconut flakes (optional)

  • 1/2 cup coconut sugar

  • 1/2 cup cocoa powder

  • 1/2 cup maple syrup

  • 1/2 cup coconut oil

  • 1 tsp vanilla

  • 1/2 tsp salt

  • Optional: Flake sea salt for topping

Directions

  1. Prep: Preheat oven to 325°F and line a baking sheet with parchment paper.

  2. Mix Dry: In a large bowl, combine the oats, nuts, coconut flakes, and salt.

  3. Simmer Wet: In a saucepan over medium heat, stir together the coconut sugar, cocoa powder, maple syrup, and coconut oil for 3–4 minutes until the sugar dissolves. Remove from heat and stir in the vanilla.

  4. Combine & Bake: Pour the chocolate mixture over the dry ingredients and stir well. Spread onto the baking sheet, pressing it flat. Bake for 25–30 minutes.

  5. Chocolate Glaze: Immediately sprinkle chocolate chips over the hot granola and return to the oven for 5 minutes. Stir the melted chocolate into the granola to coat it thoroughly.

  6. Set: Let cool for one hour before breaking into clusters. Store in the pantry for up to two weeks.
