Tropical Coconut Lime Margarita

This one really hits the right spots in the summer!!

Ingredients:

  • 1 cup coconut milk (from can)
  • 1/2 cup blanco tequila
  • 1/4 cup triple sec
  • 1/4 cup lime juice
  • 23 tbsp simple syrup or agave, depending on how sweet you prefer

Rim Ingredients:

  • honey
  • 1/4 cup toasted coconut (heat over medium heat for a few minutes until golden brown)
  • dried or fresh lime slices

Step-by-Step Instructions:

  1. Smooth the Coconut Milk: Open your can of coconut milk and empty it into a measuring cup. Give it a good whisk until the texture is completely uniform and free of lumps.

  2. Prep the Shaker: Fill a standard cocktail shaker about halfway with ice cubes.

  3. Mix the Ingredients: Pour the whisked coconut milk, tequila, orange liqueur, lime juice, and sweetener of choice into the shaker. Secure the lid and shake forcefully for about 30 seconds to chill completely.

  4. Dress the Rims: Pour a thin layer of honey onto one small plate and spread the toasted coconut onto a second plate. Press the top of each empty glass into the honey, then press immediately into the coconut flakes to create a thick, sweet crust.

  5. Serve: Drop fresh ice into your prepared glasses. Strain the cocktail mixture evenly between them, finish with a lime slice on top, and serve immediately!

  • 2 cups coconut milk

  • 1 cup tequila

Note: Since this volume might overflow a standard cocktail shaker, prepare the drinks in two separate batches, or mix everything together in a large beverage pitcher instead.
