Sesame Lime Chicken Crunch Salad

Salad Base Ingredients:   (Serves 4)

• 5 cups romaine lettuce, very thinly sliced (about 2 heads)
• 2 cups green cabbage, very thinly sliced
• 1 bunch green onion, very thinly sliced
• 1 cup edamame
• 1/3 cup cilantro, finely chopped
• 2 1/2 cups shredded rotisserie chicken
• 1 tbsp toasted sesame seeds

Sesame–Lime Dressing Ingredients:

• 1 tbsp avocado oil
• 1 tbsp toasted sesame oil
• 1/4 cup dark soy sauce (or low‑sodium soy sauce)
• 1 tbsp maple syrup
• 3 tbsp rice vinegar
• 1 tbsp grated ginger paste
• Juice of 1 lime

 

1. Prep Greens – Thinly slice romaine, cabbage, and green onions. Add to a large mixing bowl with edamame and cilantro.
2. Shred Chicken – Add the shredded rotisserie chicken to the bowl.
3. Make Dressing – In a measuring cup, whisk together avocado oil, sesame oil, soy sauce, maple syrup, rice vinegar, ginger paste, and lime juice until smooth.
4. Assemble – Pour dressing over the salad and toss well to coat. Finish with toasted sesame seeds.
5. Serve – Enjoy immediately, or chill for 20 minutes for extra crunch.

 

Other considerations:

• Swap rotisserie chicken for grilled shrimp or tofu.
• Add chopped cashews for extra crunch.
• For meal prep: store dressing separately and toss right before eating.
