Berry Filling Ingredients:
• 5 cups frozen mixed berries (organic recommended)
• 1 tablespoon lemon juice (optional but recommended)
• 1 tablespoon arrowroot powder (optional, helps thicken)
• 1 teaspoon vanilla extract (optional)
Topping Ingredients:
• 1 package sugar cookie dough (I like Sweet Loren’s)
I like to use some TruWhip’s Vegan whipped topping once I’m ready to serve it — but you can use vanilla ice cream!
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a bowl, toss the frozen mixed berries with the lemon juice, arrowroot powder, and vanilla (if using) until evenly coated.
3. Pour the berry mixture into a baking dish.
4. Break the sugar cookie dough into small pieces and scatter them evenly over the top of the berries.
5. Bake for 30–35 minutes, until the cookie dough is golden brown and the berries are bubbling.
6. Let cool slightly, then serve warm topped with a generous scoop of vanilla ice cream.
Tips:
- The optional lemon juice brightens the flavor, arrowroot thickens the juices, and vanilla adds depth.
- Use your favorite brand of frozen berries and cookie dough.
