This simple, protein-boosted homemade granola that makes the BEST big, crunchy clusters. it’s perfect over Greek yogurt, cottage cheese, smoothie bowls—or straight from the jar!
Ingredients
- 3 cups rolled oats
- 1½ cups chopped pecans or your favorite nuts
- ¼ cup vanilla protein powder
- 2 Tbsp chia seeds
- 1 tsp cinnamon
- ½ tsp salt
- ½ cup maple syrup
- ½ cup melted coconut oil
- 2 egg whites
- 1 tsp vanilla extract
Method
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, combine oats, pecans, protein powder, chia seeds, cinnamon and salt.
- Add maple syrup, melted coconut oil, egg whites and vanilla. Mix until well coated.
- Spread evenly onto the prepared baking sheet and press down firmly to help create those delicious clusters.
- Bake for 30 minutes, or until lightly golden around the edges.
- Let cool completely before breaking apart—this is the secret to getting those big clusters!
- Store in an airtight container at room temperature.
