Cranberry Sauce


  • 2 cups cranberries
  • 1/2 cup organic apple juice
  • 1/2 cup maple syrup (or fiber syrup or honey)
  • ½ tsp cinnamon
  • 1 tsp fresh grated orange rind
  • ½ cup pecans (or walnuts)

Combine cranberries, apple juice, maple syrup and cinnamon in a saucepan and simmer 5 minutes—or until most berries pop. Remove from heat, stir in grated orange rind and pecans. Cool to room temperature, then chill in the refrigerator. Serve chilled.
