Pecan & Feta Salad


  • 4-6 cups organic salad greens mix
  • ½ cup sliced dates  
  • Goat or Feta cheese
  • 1 cup pecans
  • ¼ cup maple syrup (or whisk brown sugar or brown sugar substitute with equal parts water + ¼ tsp. vanilla)

Salad Dressing:

  • 2/3 cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp Dijon mustard

Brown pecans until they smell nutty, then add in maple syrup or brown sugar mix to ‘candy” the pecans for the salad.  Cut dates into small pieces. Mix the salad greens, candied pecans, dates and cheese. Whisk dressing ingredients until smooth.  Enjoy!
